Finally, add remaining sugar and 4 oz Cider Vinegar, and cook for 30 min. more. Remove from heat and blend in food processor for 5 seconds. Salt 1 T Baking Soda 1/3 C Coconut, shredded 1/3 C Walnuts, chopped 1 C Himalania Goji Berries, plumped 1 Apple, grated with peel ½ C Pineapple, pureed 3 Eggs ½ C Vegetable Oil ½ C Butter, melted 1 T Lemon Juice 1 Tsp. Vanilla extract Place all dry ingredients in bowl of mixer, fitted with paddle attachment. Add liquid ingredients, and mix on low-medium speed until combined. Add fruit and nuts and continue to mix until evenly incorporated. Spoon batter into muffin cups. Bake at 375 degrees for 18-20 minutes or until done.
